Harvest & Vineyard
The Chenin blanc for this wine comes from vines planted in 1988 situated on the slopes of the Helderberg Mountain in Stellenbosch. These grapes were harvested at 22 Brix. The Semillon grapes are grown in Franschhoek and were harvested at 20 Brix.
Winemaking
Both Semillon and Chenin blanc were harvested separately and upon arriving at the cellar were chilled over night before going into the press whole bunch. From there the juice was settled overnight without using any enzyme before being racked off the lees to old French oak barrels for fermentation. No commercial yeast was added to these wines, it was allowed to ferment naturally. The wine spent 9 months in barrel and was gently stirred on it’s lees for added complexity and texture. Both components underwent natural malolactic fermentation. The wine was gently
filtered before going straight to bottle.
