Harvest & Vineyard

This Pinotage comes from the OG of cool climates, Stanford. The fruit was picked at 22.5 Brix by hand and chilled overnight before sorting.

Winemaking

The grapes were rigourously sorted by hand at bunch level before destemming 85% of this fruit to open top fermenters. 15% of this fruit remained whole bunch. The grapes were foot stomped and then punched down gently 3 times per day, for 7 days, before being pressed off to tank. The wine was then racked to old french oak barrels for maturation and malo lactic fermentation. This wine was gently filtered before bottling. Only two barrels were made.
