Harvest & Vineyard
Both portions of fruit are grown in cool climate areas. The vineyard in Durbanville makes up the biggest component of this wine. This block of young bushvines are planted on a rocky shale slope with a view of the ocean. This block is farmed using organic farming practices.
Winemaking
The grapes were rigourously sorted by hand at bunch level before destemming 85% of this fruit to open top fermenters. The grapes were foot stomped and then punched down gently 3 times per day, for 10 days, before being pressed off to tank. The wine was then racked to old French oak barrels for maturation and malolactic fermentation. This wine was gently filtered before bottling.
