Harvest & Vineyard

This special block of Chenin blanc was planted in the early 1960’s and is situated in Paarl. These old bush vines receive no irrigation. The grapes were harvested by hand in kussies and chilled before processing.

Winemaking

After whole bunch pressing the juice was settled out over night and then racked off the lees into old 300l French oak barrels. Fermentation was allowed to occur using natural yeast. After fermentation the wine was stirred on its lees for 7 months. After protein stabilisation no fining or filtration was needed before bottling. We waited 18 months after bottling before releasing this wine to allow it some extra time to settle.
