Harvest & Vineyard
These grapes are grown high in the Citrusdal Mountains at an average elevation of 600 m above sea level. The dryland bushvines receive no supplementary irrigation, and the significant diurnal shift allows the vines to recover from daytime stress overnight. The soils are predominantly sandstone with a vein of koffieklip running through the area. Despite the vineyard’s youth, the fruit shows a beautiful natural balance. Our grower, Albertus Marais—who primarily farms citrus and cut flowers—tends this small block as a true passion project.
Winemaking
Grapes were hand-sorted by bunch. 75 % destemmed; 25 % retained as whole clusters. Fermented in open-top vessels with foot treading and three daily punch-downs for 10 days, then pressed to tank. Transferred to old 400- and 500-litre French oak barrels for malolactic fermentation and maturation. Bottled unfiltered; light sediment may be present.
